This recipe was born out of many requests for a dairy-free vegetarian empanada. It is comprised of a plethora of delicious chunky fresh vegetables that come together as a lovely medley inside of the savory crust. The freshness of the vegetables really shine through with the combination of different textures and flavors from the veggie kingdom. The sauteed leeks provide an unparalleled depth of flavor in combination with onions and garlic that come together to provide the function of a sauce, tying together the rest of the ingredients.
